Coconut Rice
Ingredients
- 1½ cups jasmine rice
- 1 can (13.5 oz) coconut milk
- 1¾ cups water
- 1 tsp salt
- (optional) grated peel of 1 lime
Instructions
In a 2½-3 quart saucepan, bring rice, water, milk, and salt to a boil over medium high heat.
Stir, reduce heat to lowest setting and simmer the rice, stirring occasionally, for 15 minutes, or until all liquid is absorbed. Stir in lime peel and serve immediately.
