Bok Choy With Bacon and Cashews
Ingredients
- 3-4 small heads baby bok choy
- 1 package bacon
- 1 teaspoon olive oil
- 1 small sweet onion, chopped
- 3 cloves garlic, minced
- 1/2 cup raw cashews
- Crushed red pepper flakes
- Ground black pepper
- 1/4 cup water
Instructions
Heat a large skillet over medium heat.
Cut bok choy in half vertially, then chop crosswise into pieces.
Chop bacon and fry in a skillet until crispy. Move bacon to a paper towel to drain.
Drain bacon grease from skillet and return about 1/2 tablespoon of the grease to the pan. Add olive oil to the pan as well. Add onion and garlic; cook until tender. Stir in bok choy, cashews, pepper and water.
Cover pan and cook 3 minutes. Toss with bacon before serving.
This goes great served on top of Coconut Rice.
